'The Benedictine principle of the 'ora et labora’ (pray and work), the sisters of this 1957 northern Rome monastery tend the vineyard without machinery and are invested in low-intervention practices. They ferment with only naturally occurring yeasts and follow organic wine-making practices. The grapes are co-fermented for 15 days in fibreglass containers. Handful of this wine made every year. The wine has a Jura style colour in the glass. Honest and simple wine. To drink chilled. Berries, herbs and citrus. Nice summer red wine or good as aperitif'.
