2019 Monastero Suore RuscumOrange
Trebbiano, Malvasia, Verdicchio
Skin Contact, Organic, Unfined, Unfiltered
'The Benedictine principle of the 'ora et labora’ (pray and work), the sisters of this 1957 northern Rome monastery tend the vineyard without machinery and are invested in low-intervention practices. They ferment with only naturally occurring yeasts and follow organic wine-making practices. Ruscum sees 14 days of skin contact – all grapes are harvested together and co-fermented without added yeasts or temperature stabilization. It is aged on its fine lees in steel and fiberglass tanks, and bottled just before the next harvest without fining or filtering. Complex, but still very delicate. Tannins are barely perceptible. Dried apricot, black tea, orange candy. Very balanced and incredibly easy to drink'.
